Botrytised or nobly rotten grapes make the world's finest (and most expensive) sweet wines. Here, however, this golden white is complex with rich, honeyed and citrusy fruit, yet is fermented totally dry. A most elegant and unique creation from JMS at Le Chai.
Back in the 1980s, Tony Laithwaite used to collaborate with Danish winemaker Peter Vinding-Diers, who had transformed the face of white Graves. Together they once made a superb, dry, botrytised Sémillon. Never to be outdone (!), Tony’s reminiscenses of this wine inspired Jean-Marc to take up the challenge and make one himself. The result is this luscious white, first launched in 2012. He sourced two thirds of the grapes from a special lieu-dit in the Entre-Deux-Mers. The rest was late-harvested, botrytised Sémillon from Bordeaux's renowned sweet-wine region of Loupiac. This portion had the full works - fermentation in part new barrels, with ageing on its lees for four to five months in oak, but still the oak is subtle. This is a really unusual and delicious white, a serious wine to serve at dinner with friends. It's gentle toasty note and lemony zing makes it a fine partner with sauced white meats or salmon.
Hints of light spice, vanilla and honeyed lemon. Mouthfilling honeyed lemon, pear and peach notes with a hint of oak.
