Viognier is the northern Rhône's exotic, queen bee white grape with alluring aromas and spicy fruit. Here it shows how well it can perform in the cooler vineyards of the Languedoc. A highly expressive white with a mineral edge balancing rich fruit.
Le Chai's resident winemaker Mark Hoddy is very close to the vineyards and growers of southern France - that way he keeps tabs on where the best fruit is grown. During the growing season, he watches carefully and earmarks a few rows of vines here and there – wherever he finds the quality most promising. He's very hands on, directing growers on green-harvesting, pruning back, deleafing and the like, then at harvest time, he determines exactly when to pick. This aromatic Viognier comes from vines grown on fast-draining soils around the medieval town of Carcassonne - gorgeously concentrated grapes with excellent aromatics thanks to higher altitude vineyards and lower temperatures. The lightly pressed juice was taken to Le Chai for fermentation. Mark used specially selected yeasts to bring out the wine's aromas and tropical fruit even more. Go exotic and serve this white with seared scallops with lime and chilli, or Thai crab cakes.
A bright scent of peach, honeydew melon and spice. Ripe apricot, pear and honeysuckle with a good underlying freshness.
